Celebrity chef shares what her clients eat in a week

Brooke Baevsky – more commonly known as “Chef BayOn social media – a Beverly Hills private celebrity chef whose day can range from preparing meals for professional athletes to preparing homemade dishes for celebrities and royals.

Having wealthy clients gives Bayevsky an advantage; There is usually no limit to what you can buy and how much you can spend when grocery shopping.

“With these types of customers, of course, they put the highest quality ingredients, recipes with integrity, farm-to-table, and the freshest quality ingredients possible,” she says.

Baevsky often works with a dietitian or coach to make sure she meets the nutritional needs of her clients and helps them stay fit.

Through this, I was able to learn how to prepare delicious dishes while still making health a priority.

“My clients love to know exactly what’s in their food, and sometimes every macro and calorie goes into their body,” says Bevsky.

A nutritious breakfast for a strong start

Before breakfast, Baevsky clients like to start their day with a drink like lemon water or cold smoothies from scratch.

Bayevsky says “superfood” smoothies are what they often need at the top of the morning to get the nutrients they need for the day.

Smoothies usually include “protein, fiber, vitamins, nutrients, and all their supplements — calcium, magnesium, zinc, biotin — hair extracts and supplements,” she says.

Sometimes, she makes a probiotic green smoothie, made with fresh pressed greens like kale, lettuce, celery, or cucumbers.

When it comes to food, Baevsky usually makes one of these dishes for breakfast:

  • Truffle scrambled eggs: eggs with grated truffle mushrooms
  • Japanese-style wrapped omelette with sprouted buckwheat toast and avocado with delicate vegetables and basil-infused olive oil
  • Vegan Parfait: Coconut yogurt with grain-free granola that includes goji berries, bee pollen, and shaved coconut. You usually top this with organic fruits, honey, or agave.
  • Superfood pancakes or waffles with chia seeds, flax seeds, macadamia nut flour and quinoa flour

Plan a healthy lunch to power you up in the afternoon

“A lot of my clients like to eat heavy carbs before the afternoon, so rice, quinoa, and couscous,” says Paevsky.

Lunch usually looks like:

  • Zoodle soup: bone broth of beef or chicken with zucchini noodles and vegetables
  • Mediterranean-inspired salads with grilled zucchini, peppers and eggplant. Top these sauces with turmeric, lime vinaigrette or herb vegetable ranch dressing—and sometimes crunchy chickpeas and healthy vegetables.
  • Lean organic fish like wild cod, wild fish and fresh salmon
  • Healthy vegetables as side dishes with nuts and seeds
  • Wild rice bowls with herbs and dried cherries for antioxidants
